" If you enjoy a tangy lemon sugar cookie this is the recipe. I try to make them heathier by using unbleached and whole wheat flour & less sugarthan the recipe calls for. The glaze is made with confectioners' sugar , lemon juice and lemon zest. The glaze just makes the cookie ! A wonderful cookie to enjoy with a cup of mint tea!
Recipe: 1 cup butter
1 cup sugar
1 cup confectioner's sugar ( I use 1/2 cup)
1 cup vegetable oil ( I use 1/2 cup 1/4 cup water)
2 eggs ( I use large eggs)
lemon juice from 1 1/2 lemons ( zest these lemons and add to batter 0
4 1/4cups flour 3 cups unbleached white 1 cup wheat
baking soda 1 teas
1 teas cream of tarter
If batter is not stiff..add 1/4 more flour mix again.
additional sugar (use wet glass dipped in sugar to press down cookies optional)
Glaze Confectioners sugar and lemon juice blend toogether juice of two -three lemons with confectioners sugar and zest of those lemons til good stiff consistency to spread . Spread on cooled cookies
pre heat til 350 ungreased -parchment papered cookie sheets
roll ball 1inch then flatten with sugared glass bake about 10 minutes til just lightly browned on edges. cool on wire racks . ice cooled cookies on rack with cookie sheet underneath to catch "glaze drippings"
